How to open a cloud kitchen: the operations view

A cloud kitchen is a restaurant with no dining room, earning all of its revenue through delivery platforms. The rent is low, but the economics come from discipline, not rent: an operator with no system for platform commissions, a multi-brand menu and peak-hour chaos pays that cheap rent back very quickly.

The model: one kitchen, many brands

The real leverage of a cloud kitchen is running several virtual brands off the same prep line: the burger brand, the chicken brand and the dessert brand all come from the same chef's hands but appear on the platforms as three separate restaurants. Three shopfronts, three times the discoverability, one kitchen's costs — perfect on paper; in practice it demands a system that never confuses which order belongs to which brand.

The pre-opening checklist

  1. 1Location — judge by delivery density, not cheap rent: evening population within a 3–5 km radius, courier access and competitor density.
  2. 2Menu engineering — pick dishes that travel well; a presentation that collapses in 30 minutes means refunds and bad reviews.
  3. 3Platform agreements — register each brand separately on Yemeksepeti, Getir, Trendyol and Migros Yemek; note the commission rates per brand.
  4. 4System setup — software that gathers every platform order into one dashboard and routes it by brand must be ready before opening day.
  5. 5Packaging and identity — a receipt template and packaging label per brand; the box is the only thing the customer will ever see.

The operating plan for the first 90 days

  1. 1First 30 days: open with a single brand; settle your prep times and cancellation rate. Platform algorithms reward on-time preparation.
  2. 2Days 31–60: launch the second brand off the same line; test for station clashes and receipt routing.
  3. 3Days 61–90: read the per-brand profitability report — which brand makes money on which platform? Fix the ones that don't, or close them.

What do you need on the software side?

A cloud kitchen's software list is different from a dine-in restaurant's: floor plans and reservations are irrelevant; platform integration, per-brand revenue separation and site-and-brand price management are vital. Dasvio brings those three together in one dashboard: orders flow to stations by brand, receipts print under each brand's identity, and at the end of the day every virtual brand's revenue is reported separately, platform commission included.
